It is once again Berry Season here in Norway! Berry Picking is a past time for just about every Norwegian and it is something I have fallen in love with since moving here. The other day I was craving homemade blueberry muffins! Of course this was sparked by all the fresh blueberries my in-laws brought home. So Mr. Viking, the kids and I headed out to the forest to forage some blueberries! Once I had my blueberries it was time to make these Healthy Wild Blueberry Muffins.
After foraging for wild blueberries I had to sort and clean them and see how many I ended up with! I had so many that I ended up with tons of muffins and a few small loafs! These muffins are not only easy but they are also good for you making them the perfect go to breakfast item. The small loafs make the perfect gifts for friends and family as well!
These muffins are healthy with a very limited amount of sugar added and made mostly with Oats. I actually can’t wait to take this muffin base and try other fruits! These muffins are loaded with juicy fresh blueberries and are super moist inside.
If you don’t live in a place you can get Wild Blueberries no worries you can use fresh bought from the store and even frozen blueberries! I would definitely buy organic though!
This muffins will be hits with your entire family and especially your kids! Everyone gobbled them up while they were still warm! Although I was able to save a few for the freezer! I will definitely have to hit the forest again to get some more blueberries so I can make some more these delicious muffins!
This recipe calls for a vegetable oil of some sort. I used rapeseed oil… It is one of my go-to oils for baking.
Healthy Wild Blueberry Muffins
