Today I have another great recipe for you! I have been in the kitchen creating some new and fresh recipes. This Berry Parfait has been one of those delicious creations.
Recently I have started working again and sometimes it can make mornings slightly more challenging. I know that if I don’t get a delicious and fulfilling breakfast then I don’t have the energy for the day. I also recently participated in Anna Dupree’s 5 Day Breakfast Challenge. Making breakfast a priority is something I really have wanted to focus on this year. However, I kept coming up with excuses. I know how important it is. I make sure our kids eat a healthy and well balanced breakfast but I almost never eat breakfast. With the 5 day Breakfast challenge that all changed. It was the kick in the butt I needed.
Now that I am focusing on eating breakfast each and every morning or at least trying to ( I am a work in progress). I have been trying to create quick recipes so I don’t have to worry about being rushed in the morning. This recipe is not only quick and easy it can easily be made ahead of time in a lot of different varieties.
This delicious Berry Breakfast Parfait is created with Greek Yogurt, a little honey for the sweetness factor, berries, chia seeds, granola, almonds and a few pomegranate seeds. I know that it seems like there are a lot of ingredients but trust me the recipe is not time consuming at all.
I like to prep everything the night before so it is ready to go first thing in the morning. Then I can whip it all together while I making the kids lunches. If I don’t have time to dig in to it before hopping in the car to take the kids to barnehagen no worries. I just put it into a mason jar and take it with me to work.
Believe me this parfait is a healthy and filling breakfast that everyone in your family will love.
